Our Amontillado has its roots in the
19th century.
It is the result of blending soleras from Croft, Osborne,
Bobadilla and Delgado-Zuleta. The resulting wine has been aged for
37 years and is categorised as VORS
At
first the wine developed biologically in contact with the flor. Once the flor had been removed the wine
came into contact with the air within the barrel and oxidation
occurred.
Our
Amontillado is pale mahogany in colour and with pungent aromas of hazelnut,
vanilla and old leather on the nose.
We recommend it is served moderately chilled (at 15ºC)
and is a good accompaniment to artichokes, asparagus, soups and consommés, as
well
as mature cheeses, white meat, oily fish, and smoked and pickled meat and
fish.
